1.黄瓜洗净

2.斜着削成小块或切小条

3.加入2两大粒盐,拌匀

4.腌制12小时左右,至黄瓜变软出水

5.杀出的水分弃去不用,把腌好的黄瓜装到纱布袋中

6.系好袋口,放在铁架上,上面压一重物,挤出多余的水分(我是早上压的,上午有事,中午取出挤干水分的黄瓜,这个时间自己掌握吧);

7.可以尝尝挤干水的黄瓜,如果太咸可以用清水稍浸泡一会再挤掉多余水分(不用担心黄瓜吃水,这样处理后可以洗掉部分盐分,而黄瓜依旧是蔫软有韧劲的);

8.准备好调料:酱油、糖、花椒、大料,姜蒜切片,干辣椒剪成小段

9.锅烧热,放入3大匙油,冷油下花椒、大料

10.小火炒出香味后将花椒大料弃去不用

11.下干辣椒段,小火爆香

15.稍晾凉,下蒜片、味精,拌匀晾凉

16.待料汁凉透浇到黄瓜上

17.充分拌匀,盖上盖子或用保鲜膜密封好碗口,入冰箱冷藏过夜,第二天就可以吃了
